Portobello Mushroom Sandwiches

Ingredients

2 large Portobello mushrooms, stems removed
¼ cup low-fat balsamic vinaigrette dressing
Cooking spray
2 (1-ounce) slices provolone cheese
2 (2.5-ounce) whole-wheat hamburger buns
½ cup diced plum tomatoes
1 clove chopped garlic

Directions

Brush both sides of mushrooms evenly with 3 tablespoons of balsamic vinaigrette dressing. Coat grill rack with cooking spray and place mushrooms on grill over medium hot coals (350-450). Grill mushrooms covered for 4 minutes on each side or until tender. Place cheese on mushrooms and grill an additional minute to melt cheese.
Brush buns with remaining 1 tablespoon dressing; grill covered, until lightly toasted. Place mushrooms over bottom of buns. Top with tomatoes, garlic, and tops of buns.
