Banana Bread
Ingredients
1 tablespoons margarine, soft
2 cups less 2 tablespoons flour
1/8 teaspoon salt
1 ½ teaspoon baking soda
¼ cup sugar
2 eggs lightly beaten
½ cup buttermilk
1 teaspoon vanilla
3 ripe medium bananas, mashed with fork
Directions
Cream margarine and ½ of the flour. Mix with salt, baking soda, and sugar. Add the beaten eggs and mix well. Add the remaining flour and buttermilk alternately. Add vanilla and mashed bananas. Put dough into a well greased and floured metal loaf pan. Bake at 350 degrees for 1 hour. Cool on its side. Wrap in foil and put in a plastic bag sealed tightly. Store in refrigerator. If possible keep for 2 days before eating.
