Breakfast To Go

I’ve personally found breakfast to be a struggle, especially when trying to steer clear of processed foods that contain additives and preservatives. This past weekend I struck gold, creating my own ‘instant oatmeal’ breakfast that can be prepared in batches ahead of time. This recipe is great because it is made with organic, quick cooking rolled oats, which provide 5 grams of fiber and 7 grams of protein per serving, while yielding only 180 calories and 3 grams of fat. For a touch of sweetness I added 2 teaspoons of brown sugar, which packs on just an additional 30 calories. I also added about 1 oz of raisins (about 60), which contributes another 85 calories or so. All in all, you have a light, healthy breakfast in just under 300 calories. The recipe is as follows:
Prepare ahead of time:
- 1/2 cup of Bob’s Red Mill Organic Quick Cooking Whole Grain Oats (or any instant/quick cooking rolled oats)
- 2 teaspoons of brown sugar
- 1 oz (60) raisins
To cook:
- Add 1 cup of water
- Cook covered on high in microwave for 2-3 minutes; I’d recommend stirring the mixture every minute so that the heat gets distributed evenly.
