Quick and Easy Omelet

Written by Allie McTighe. After being back at Miami University these past couple weeks, I have found that it can be difficult to make healthy meals in a short period of time. Frozen vegetables have saved me a lot of time. I bought two packs of frozen peppers and onions at the grocery store, in the frozen vegetables department, this week. First, they last far longer than freshly picked vegetables. Second, they save me time that I would spend washing and cutting vegetables. After my morning class, I put the peppers and onions in a skillet with little olive oil and add two eggs, ham, and a little bit of cheese to make an omelet (sometimes I had spinach too). I recommend buying frozen vegetables to all college students. It saves a lot of time, and provides us with vegetables we need throughout the day.
