Fajitas for Dinner

What are easy, quick, healthy, and delicious dinner options for college students? College students struggle with having time to make a healthy meal, when they are slammed with homework, classes, and extra-curricular activities. Last night after coming home from a long school day I decided to make chicken fajitas. I grabbed a yellow and green pepper, yellow onion, and chicken from my fridge. I sliced the chicken, peppers, and onion and put a skillet to a medium heat with a little olive oil. I seasoned the chicken with sea salt, fresh ground pepper, and crushed red pepper flakes. Once the chicken had a light brown grill I added the peppers and onions. I then heated up a corn tortilla and grabbed some hot sauce and low fat cheese. The chicken fajitas were delicious, to say the least!
I also made enough fajitas for two dinners, which was great because that meant no cooking for the next night! This meal was delicious, easy, and quick. It also got me thinking that by preparing meals in bulk or pre-slicing vegetables, we can save time on meal preparation throughout the week. I recommend all college students to plan their meals ahead of time. It often results in healthier choices, and not to mention delicious too!
