Eggs: My Breakfast Essential

Written by Allie McTighe, dietetic student at Miami University of Ohio: What is your go to breakfast choice? My go to breakfast are over easy eggs. They are quick and easy to make but you can also do so much with them! I love making omelets, vegetable hash, hardboiled eggs, and poached eggs. My new breakfast favorite entails two over easy eggs laid on top of a bed of vegetables. The vegetables I choose are spinach, onion, and tomato. I have tried peppers and onion before too, and it is delicious. I pair my eggs with a slice of whole-wheat toast with avocado spread, and a handful of blueberries. It is a perfectly balanced breakfast with a source of carbohydrate, protein, healthy fat, vegetable, and fruit. Having breakfast is an important step to living a healthy lifestyle!
