Congratulations to the Cleveland Indians and the Chicago Cubs for making it to the World Series of baseball. Whichever team wins tonight takes the title of 2016 World Series Champs! We will be watching from our living room cheering the Cubbies to victory. Below is a quick and easy recipe you can use tonight if you are hosting a watch party. It is light and tastes great!
Sweet Potato Medallions Topped with Guacamole
Time 20-25 minutes
Ingredients:
Sweet potatoes (small in diameter)
Yellow OR Red snack tomatoes (we used Sunbursts brand)
Avocado
Lime
Salt to taste
Pepper to taste
Crushed red pepper flakes to taste
Directions:
Preheat oven to 400 degrees F.
Slice potatoes in thin circles (about 1/4 inch thick) to make medallions. Line the baking sheet with foil and drizzle 1T olive oil (more if you are making a lot of potatoes) around the pan. Put sliced potatoes on the pan and make sure to get oil on both sides of all the slices. Add a little salt and pepper to taste. Place in oven for 15 minutes.
Slice tomatoes in halves or quarters, sprinkle with salt and set them aside. Peel, and mash an avocado. Add crushed red pepper for some spice and lime juice for flavor and to avoid browning. Lime juice is an important part because it really brightens up the flavor of this snack!
When the medallions are finished, top with avocado and tomato halves.
