Easy Low-Carb Cabbage Soup

Looking for something to keep you warm but not break your calorie bank? This super easy vegetable soup can be made in a large crock pot or large pot on the stove. I like to make it and freeze half the product for another time. The only source of spice in the soup is the can of green chili tomatoes, but get creative if you have a palate that can tolerate some heat! Here is the how-to:
Ingredients:
1 small cabbage, chopped
4-5 stalks celery, chopped
1 green bell pepper, diced
4-5 green onions chopped in 1/2 in pieces
1 can diced tomatoes
1 can diced tomatoes with green chiles
1 T dried chopped onion
1 t onion powder
sprinkle of parsley flakes
2-3 cloves garlic, pressed
Chicken stock OR 2 bullion cubes and water (enough stock or water to cover top of veggies)
Directions:
Place all of the prepared vegetables into a crock pot or pot on the stove. Add spices and seasonings. Next, pour in the chicken stock or add the bullion cubes and water. Place on low heat setting for four hours, stir every hour or two.
Bonus: If you need something a little heartier, add in some cooked quinoa or chopped chicken breasts to the finished product.
