Healthy Pancakes for National Blueberry Pancake Day

Happy National Blueberry Pancake Day!

Many people like to avoid pancakes when they are trying to eat healthy, but there are so many variations of this delicious breakfast food.

If you get home from work tonight and the idea of breakfast for dinner appeals to you, why don’t you try making these easy and healthy 2-ingredient pancakes? You might have these in your home already.

All you need is 1 banana and 1-2 eggs, depending on the size of the banana. If you’re using a large banana, use 2 eggs.

In a bowl, mash the banana well with a fork. Add the eggs and mix well until it resembles a pancake batter.

Spray pan with a non-stick spray if needed, heat pan on medium heat, and pour mixture into it.  Cook on one side for about 5-7 minutes, then gently flip with a spatula. Make sure that the bottom looks completely cooked before you flip it since it can fall apart easily. Cook other side for about 5 minutes

Put it on a plate and eat with whatever toppings you like. I like to use yogurt or maple syrup. Today, you can use blueberries!

You can also add other ingredients to your pancake mix. I’ve added cinnamon, chocolate protein powder, almond extract, or chia seeds.
