Introducing Avocado Brownies
Written by Alexis D’Ascenzo, Dietetic Student at University of Illinois at Chicago, CPT
I know what you are thinking. Nutrient dense brownies? But how? Well this recipe only contains 4 ingredients, and most importantly they contain avocados! I have been on an avocado kick lately, and after I ate these amazing brownies it became a whole new ball game for me. As you may know avocados contain a heart healthy fat known as monounsaturated fats.
But what exactly are monounsaturated fats? To keep it short, but speaking chemically they are simply fats that have one double bond in the fatty acid chain. These healthy fats help lower LDL cholesterol levels (the “bad” cholesterol), decrease the risk of heart disease and stroke, and have a high levels of antioxidants such as vitamin E which can help reduce the risk of cancer.
