Baked Cauliflower

Written by Allie McTighe, dietetic student at Miami University of Ohio: Tonight for dinner I tried a recipe that I thought would get my family to enjoy eating vegetables. I took cauliflower and drizzled minimal olive oil and a pinch Parmesan cheese on top and baked them in the oven at 375 F for 15-20 minutes. The longer the cauliflower cooked for the more brown and soft the cauliflower became (harder texture cook for less time). My family enjoyed the baked cauliflower! My grandpa even said it had great flavor. I’m going to try this recipe with asparagus and broccoli this week. Just a pinch of Parmesan cheese and minimal olive oil, was able to get my family to enjoy some vegetables at dinner. I plan to work on more recipes this week to get my family to like the taste of healthy foods.
