Cold Winter Night Dinner
in The Too Busy to Diet Blog on January 18, 2016
Written by MS, RD, LD, CDE Monica Joyce: We’re below zero here in Chicago and hunkered down. What to cook without running to the grocery store meant rummaging through the refrigerator and freezer.
I threw together a whole chicken, onion, celery, carrots and a can of tomatoes, seasoned and simmered for a few hours. Pulled out some Tuscan Italian bread I had made, topped my soup with fresh Parmesan cheese and poured a glass of wine. Perfect for a cold night and enough leftovers for the next two nights.
Hoping then the temperature rise.
