Dinner.. It’s What’s For Breakfast

I have never been a fan of breakfast foods unless it’s French Toast or pancakes. Eggs give me a gag reflex. However, if eggs can be disguised in a dinner plate, I’ll eat them. They’re very tolerable in fried rice, even great a top a burger! I especially like them in a breakfast burrito.
To boost my morning protein, I’ve come to enjoy a breakfast chicken and egg burrito. It’s last night’s dinner, plus the egg.
The two small burritos include ~1 c grilled chicken, 1 1/2 eggs total and 1-2 T mashed beans. Then you can jazz it up with any fresh veggies. I have garden tomatoes, chopped onion, and avocado slices (which are a good source of fat to slow glucose uptake). The only thing missing is cilantro!
Each small tortilla contains 14g carbs. So, for the low cost of 28g carbs, this burrito packs a huge protein punch in the morning.
