Freeze-drying is a method of food preservation. To offer a quick explanation: foods are frozen very, very quickly then the ice is removed via vaporization by vacuum. Seems a little odd, right? Well Food Navigator just published this article that discusses the (ex)mystery of freeze-dried foods. Now we can enjoy things like cereals or on-the-go snacks with ease and comfort knowing they are just as nutritional as their juicy counterparts.
