Not so Fast: Don’t Throw Those Pumpkin Seeds Out!

Written by RD, MS, CDE Monica Joyce: It’s getting close to carving time so before you scoop up and throw out the seeds remember that they can be a healthy snack to munch on for you or your kids.
Toasted pumpkin seeds pack 5 grams of protein, 5 grams of fiber and 5 grams of fat in one ounce. Only 1 gram of the 5 grams of fat is saturated fat. Not a bad deal.
Rinse pumpkin seeds and spread on a baking sheet coated with non-stick cooking spray or small amount of olive oil. Bake at 325 F for 30 minutes or until lightly toasted. Stir occasionally during baking.
