Freezing Weather Calls for Hot Soup

I’ve been trying to find a homemade recipe for soup that I can make a huge batch of that will last me throughout the week. Being in college I find that I will eat healthy if I prepare my meals ahead of time. Soup is a great option for this. It is easy to heat up for lunch or dinner when I have a busy schedule of classes, studying, group meetings, etc. My roommate Melissa Tarr, came up with a great chicken tortilla recipe, that luckily we love, because we will be eating it for the next week. The recipe calls for:
Low sodium chicken broth
Sweet onion
Garlic
Jalapenos
Chicken breast
Frozen cornBlack beans
Diced tomatoes
Avocado
Brown rice
Low fat cheese
PaprikaIMG_6668 Garlic salt
Cayenne pepper
(A drop of sour cream if you want ☺)

This soup is very good and relatively healthy within a cup portion size. To limit the fat content avoid adding cheese and sour cream. I am looking forward to finding another homemade soup recipe for next week.
