Fresh Summer Salsa Recipe

As summer approaches and the weather gets nicer, this recipe is perfect for cookouts, or just eating a family meal outside. It’s fresh, and full of veggies for vitamins and nutrients. Black beans are a great source of protein and fiber, and the zucchini is full of vitamins including folate, magnesium, vitamin A, omega-3 fatty acids, and potassium. Corn is also abundant in beneficial vitamins and contains antioxidants, and it can help reduce cholesterol absorption in the body. This recipe is super easy to make, and you can serve it as a salad, or with chips as a salsa.
Ingredients:
3 cups corn
1 red bell pepper, diced
1 cup red onion, diced
1 15 oz. can black beans, drained and rinsed
1 medium zucchini, diced
Handful of fresh cilantro, chopped
Dressing:
3 tablespoons olive oil
Freshly squeezed juice from 2 limes
¼ teaspoon garlic powder
1 teaspoon ground cumin
½ teaspoon salt
¼ teaspoon ground black pepper
Directions:
- Dice veggies and place in a large bowl, toss to combine.
- Add chopped cilantro to veggies, and toss.
- Whisk dressing ingredients together in a small bowl, and coat veggies.
- Toss salad with dressing, and serve chilled.
