1 sprayCooking Oil Spray
16 oz.Salmon Fillet(s), from frozen, skinless, thawed
10 CBaby Spinach, fresh, bite-sized pieces
2 CChick Peas (garbanzo beans), can, drained & rinsed
1 CBlueberries, fresh
1 CCucumber, chopped
2/3 CFeta Cheese, crumbled
1/3 CItalian Salad Dressing, light

Cook proteins to (internal temp.)…Chicken & Turkey: 165, Ground Meats: 160, Beef: 145, Pork: 145, Fish/Shellfish: 145

Preparation

  1. Lightly coat the grill grates with cooking oil spray. Prepare the grill for cooking at medium heat.
  2. Grill the salmon for about 10 to 12 minutes, turning once, or until the internal temperature reaches at least 145 degrees.
  3. While the salmon is cooking, mix together in a bowl the baby spinach, chick peas, blueberries, cucumber, feta cheese and Italian dressing. Top the salad with the grilled salmon.
