Healthy Foods that Taste Good

Written by Allie McTighe, dietetic student at Miami University of Ohio: After being home from college a week now I have enjoyed being able to make healthy meals at home for myself, and family. As I’ve been home I’ve realized how much I have learned about nutrition and how I can enrich my family’s life because of it. I went to the grocery store with my mother this week and bought many fresh fruits and vegetables, whole grains, lean protein (chicken, ground turkey), and some healthy snacks. So far I’ve noticed that they love to make veggie omelets, and enjoy having fresh fruit in the kitchen, such as bananas, apples, strawberries, and blueberries. Throughout my education I learned that people choose what food to eat based on three things, taste, economics, and environment. I’ve noticed that my family tends to pick foods based on taste. This morning I made two eggs with cracked pepper, fresh strawberries and blueberries, and a slice of whole grain toast (not pictured). I feel full and energized to start my day. My goal for this summer is to make healthy meals that my family enjoys the taste of. I am up for the challenge!
