Homemade Beef Stew

Written by Monica Joyce, MS, RD, LD, CDE:
After a long day of raking leaves on sunday I decided to make beef stew. I prepared the beef stew in under 15 minutes.
After lightly coating the stew meat in flour I browned it along with an onion in some olive oil. I threw in some carrots, perked and diced potatoes, a can of diced tomatoes and some red wine, salt and pepper to taste.
I then covered and simmered the ingredients for about 2 1/2 hours.
I added a glass Chianti and some Italian bread. It turned out great and we enjoyed it again monday night. Some of the simplest meals are the best!
