Homemade Bread

Written by Monica Joyce. Cold, snowy weekends are perect times to bake some homemade bread. I have been using Antoinette Pope’s White Bread recipe for 40 years. It is my favorite. I love to make bread from scratch, kneading the dough by hand. In fact, I can’t imagine any other way.
This traditional method seems to be a lost art and science. Kneading causes the two proteins gliadin and glutenin in the flour to expand and form strands of gluten. Eventually this creates a springy and elastic dough. Though Lucy is only two it isn’t too soon to teach her this wonderful old fashion way of making bread. Lucy had it for breakfst this morning and loved it. And did I mention how wonderful the houses smelled with 2 loaves of bread baking.
