Lower Calorie Green Bean Bake
in The Too Busy to Diet Blog on November 24, 2015
To make a healthier dish, try blanching fresh green beans and add to the casserole dish in place of frozen or canned beans.
To cut calories, fat, cholesterol, and sodium add the soup’s healthier canned version that reduces calories, fat, cholesterol, and sodium with minimal change to taste. If you are watching your sodium intake either use lower salt soy sauce or omit it completely. Use skim milk instead of whole milk. In place of the French fried onions, mix breadcrumbs and 2 tbs. olive oil and sauté over low heat for 1 minute. Add lemon zest from a small lemon, and 2 small minced garlic cloves to the breadcrumbs and cook for 3-5 minutes. Add to the green bean casserole in place of the French fried onions.
