Meatless Monday Thai Fried Rice

Meatless Monday is a great way to try and reduce your saturated fat consumption and increase your intake of vegetables and whole grains. A diet high in saturated fat has been shown to increase your risk for developing cardiovascular disease (CVD), whereas vegetables, fruits and whole grains are proven to be protective against CVD. Eating a plant based diet can decrease your overall calorie consumption, which helps prevent the development of obesity and other metabolic disorders such as type II diabetes and heart disease. Substituting vegetables and whole grains for meat is also a great way to save on your weekly budget, as red meat tends to be more expensive than legumes, whole grains or vegetables.
This weekend, I made a delicious Thai Pineapple Fried Rice dish, which would be a great recipe to add into your Meatless Monday line up. This dish incorporates fresh pineapple, bell pepper, brown rice, cashews and cilantro into a quick, healthy and vegetarian dinner. I’ve included the recipe below – enjoy!!
