Meatloaf and Potatoes for a Cold Winter Day

The winter weather is colder than ever, and all we want to eat is simple food that will warm us up and make us forget about what’s happening outside. For a family-friendly meal that has Lucy’s stamp of approval, try meatloaf, mashed potatoes, and corn. We found an easy-to-make meatloaf recipe just for you.

Ingredients

  • 1.5 pounds ground beef
  • 1 2-ounce envelope onion soup mix
  • 1 cup shredded Italian cheese blend
  • 1 cup flat-leaf parsley, chopped (optional)
  • 2 eggs
  • 1.5 cups saltines (about 4 ounces), finely ground
  • 1/3 cup water
  • ½ cup barbecue sauce (optional)

Preheat oven to 400 degrees F. Combine the beef, soup mix, parsley (if using), eggs, and saltines in a large bowl. Add water and mix.

Put the mixture into a baking dish and form into a 9-inch loaf. Bake for about 40 minutes or until cooked through.

If you want to use barbeque sauce, remove meatloaf after about 25 minutes of baking, pour the sauce on top, and place back in the oven for about 15 minutes.

Serve with mashed potatoes and corn or with any side veggies that you and your family enjoy!
