Pescado a la Veracruzana

( Coastal Fish Dish)

Sylvia Klinger, Too Busy to Diet’s Hispanic Dietitian colleague has shared a tasty fish treat.

This dish is great because not only is it tasty, quick and easy, but it is also nutritious with low-fat fish and tomatoes.

Tomatoes are the major dietary source of lypocene that reduces risk of heart disease and cancer.

Ingredients

2 teaspoons olive oil

½ medium white onion, thinly slice

4 to 6 tomatoes, chopped

½ jalapeño chile, seeded, chopped

¼ cup canned diced pimentos

¼ cup green olives

¼ cup capers

2 fresh thyme sprigs or ¼ teaspoon thyme

2 fresh marjoram sprigs or ¼ teaspoon dried marjoram

1 laurel leaf

4 red snapper filets or white fish

½ teaspoon salt

Pepper to taste  

Preparation:

  1. In a large skillet, heat the oil at medium heat and cook the onions until tender. Stir in the tomatoes chile, pimentos, olives, capers and herbs. 
  2. Seasoned fish filets with salt and pepper and place over the tomato sauce. Cover and cook for about 15 minutes or until fish is fully cooked.

Serves: 4 servings
