Harvest Rotiserrie Chicken Salad

Summer is a great time for a cold chicken salad. With temperatures in the mid 90’s to over 100, we all need a fast, cool summer dinner. Cook sweet potatoes in the microwave to keep your kitchen cool. In the winter, cooking in the oven works too. Sweet potatoes are a great source of Vitamin A and fiber.
Quantity | Ingredients |
---|---|
1 1/3 T | Margarine |
3 C | Sweet Potato(es), fresh, peeled, bite-sized pieces |
10 C | Baby Spinach, fresh, bite-sized pieces |
2 C | Apple(s), slices |
2/3 C | Feta Cheese, crumbled |
1/4 C | Red Onions, skin removed, finely minced |
2 1/2 C | Rotisserie Chicken, cooked, no skin, no bones, chopped |
1/4 C | Balsamic Vinaigrette Dressing, light |
Preparation
- Preheat the oven to 425 degrees. Melt the margarine in the microwave oven in a microwave-safe dish (this will only take a few seconds).
- In a baking pan with sides, mix together the melted margarine and the sweet potato pieces. Evenly spread the sweet potatoes in the baking pan.
- Put the baking pan into the preheated oven for about 10 minutes or until the potatoes are tender.
- Layer the ingredients in this order onto plates: spinach, cooked sweet potatoes, apples, feta cheese, red onions, and rotisserie chicken. Drizzle on the balsamic vinaigrette.
