Summertime Recipe

Written by Allie McTighe, dietetic student at Miami University of Ohio: One of my favorite summertime recipes is my mom’s baked teriyaki chicken with pineapple slices. She uses organic chicken breasts, marinated with low sodium teriyaki sauce, adds slices of pineapple on top of the chicken. and bakes it in the oven at 400 °F for 30 minutes. My dad and I stole the recipe and tried it with salmon tonight, and it was delicious. We also had baked cauliflower and asparagus with olive oil and slight Parmesan cheese on top. We also had a side of brown rice. What I love about this meal is that we hit all the major food groups, vegetables, lean protein, fruit, and carbohydrates. Looks like my family and I are making progress with healthy meals this summer!
