Tacos!

Nothing quite cures a case of the Mondays like a good taco. These steak tacos are some of the best I have had in awhile. Here is the how-to.
Taco shells: Place small corn tortillas in a pan and allow them to crisp for 2 minutes on each side on medium heat. Wrap the tortillas around a rolling pin until they cool. This will make them into a perfect taco shell to hold all these other tasty ingredients.
Sauce: A flavorful sauce is a necessity- especially if your steak accidentally got too dry. I use Valentina sauce quite frequently in my own kitchen and highly recommend it.
Steak: Use any steak recipe for these tacos. I like medium rare steak with the basics (salt, pepper, olive oil). Get creative!
Onions: Cut into slices about 1 inch long. Place them in a bowl and pour white vinegar on top. Sprinkle in salt and pepper and toss lightly. If needed, place another bowl on top of the onions to weigh them down and keep the slicec submerged. Leave them in the vinegar for 15 (ish) minutes.
Radish: Slice thin and toss with sea salt and cracked pepper.
Cilantro: Every taco needs a garnish with multiple functions- taste AND appearance.
