Winter Night Soup

Written by Monica Joyce, Cold dark winter nights usually means suppers made up of hearty meals like stews and pot roasts. But I recently made a homemade chicken soup that gave me several week day suppers and took just a few minutes to reheat. I sprinkled some Parmesan cheese on my soup that was filled with chunks of chicken and farfalle noodles. I added a salad with oil and vinegar dressing and a chunk of crusty Italian bread. Finished my meal off with a cup of espresso. A delicious and filling supper without the calories. Could be why I lost one pound this week!
