Zucchini Noodles

Written by Allie McTighe, dietetic student at Miami University of Ohio: After arriving back at school I have been striving to find healthy meals that are easy and quick to make. Last night I was able to make a zucchini noodle Mediterranean pasta in a matter of 10 minutes. The Veggetti Spiral Vegetable Slicer made this process very quick. I simply washed the zucchini and twisted it through the slicer, it was that simple! In a matter of seconds I got perfectly noodle shaped zucchini. I put the noodles, mushrooms, tomatoes, and yellow onion in a skillet with olive oil. I added some freshly cracked pepper and feta cheese to top it off. The zucchini noodles tasted just the same as normal noodles, if anything better. It has been difficult for me to find filling, healthy, and easy meals that I can make in a matter of 10 minutes, however this meal fit all those expectations. What a great way to get even more vegetables in my diet. If I had had more time topping off the pasta with grilled chicken or shrimp would have been delicious, I’ll save that for next time.
